Recipe: Avocado Tuna Salad

Lunch Envy. It’s happened to us all one time or another in the work place. And if your office is anything like CorePower Yoga Headquarters, lunch envy is all too common. The office is a great source of inspiration for great, healthy meal ideas.

One lunch recipe that is pretty popular at CPY Headquarters is a quick and nutritious Avocado Tuna Salad. The natural fat in the avocado takes the place of mayo, without compromising any flavor.  You won’t ever eat traditional tuna salad again, after making it this way. With so many different spins on the same recipe, this naturally creamy tuna salad can be added to your routine lunchtime staples list.

Ingredients

  • ½ of a Ripe Avocado

  • 1   2.6 ounce packet or a 3 ounce can of Tuna in Water

  • Salt and Pepper

Optional Additions

  • Chopped Red Onion

  • Chopped Celery

  • Chopped Hardboiled Egg

  • Chopped Pickles

  • Chopped Carrot

  • Capers

  • Mustard

  • Olive Oil

Instructions

  1. Drain the tuna and place in a bowl.

  2. Score the avocado lengthwise and widthwise and then scoop with spoon. Add to the bowl.

  3. Mash the avocado into the tuna with a fork until well integrated.

  4. Stir in any additional ingredients that you wish.

  5. Add salt and pepper to taste.

  6. Enjoy!

The possibilities are endless with this tuna salad! Add on top of a mixed green salad, to two slices of whole grain bread, scoop with tortilla chips or simply eat with a fork. However you choose to construct your Avocado Tuna Salad, just beware. This recipe is sure to cause lunch envy in your office.
