Pumpkin Pie Energy Balls

Tis the season for pie, especially pumpkin! Unfortunately for all of us, eating Pumpkin Pie every day isn’t really the best idea for our health... but these little energy bites change all that! They’re naturally sweetened with dates and spiced with all of those fall flavors we love. I know “healthy” alternatives aren’t always as good as we want them to be, but these little guys are oh so satisfying. You’ll be making them all fall long! Here’s how you do it:

Pumpkin Pie Energy Balls 1

Ingredients

  • 15 medjool dates

  • 1/2 cup pumpkin puree

  • 1/4 cup oats or oat flour

  • 1/2 tsp ground cinnamon

  • 1/8 tsp ground ginger

  • 1/8 tsp ground nutmeg

  • 1/4 cup pecans

  • 1/2 tsp vanilla

  • 1 tbsp coconut flakes

  • Pinch of salt

  • 1 tbsp coconut oil, melted

  • 2 tbsp ground flax

  • 1/4 cup raisins

  • Extra chopped pecans

Instructions

Start by soaking your dates in some warm water for about 10 minutes. This just helps soften the so they’re easier to work with. Once they’re soaked, drain and add them to your food processor. Pulse until the dates are broken up into small pieces.

Now it’s time for everything else! Add pumpkin puree, cinnamon, ginger, pecans, coconut flakes, vanilla, nutmeg, salt, ground flax and coconut oil. You will also want to add your oat flour or oats at this time. If you like the consistency soft (like pumpkin pie), use oat flour. If you prefer it to be more firm (like my Peanut Butter Balls), use rolled oats.

*Tip: You can make oat flour by pulsing some oats in your food processor. That’s all there is to it!

Transfer the mixture to a bowl and fold in raisins and extra chopped pecans (optional). Put it in the fridge and let it set for at least 30 minutes. After that, take em and roll em up!

Sprinkle a little extra cinnamon on top and that’s it! They should be stored in the fridge, but you can also keep them in the freezer. (I even eat them straight out of the freezer - so good!)
