Power Lunch: Kale Salad with Tahini Dressing
A meal that’s both easy to prepare and delicious is the holy grail of healthy eating. When you come across a recipe like that, you have to share it. That’s why we were thrilled when Cheryl Couris (@missmakesalot) submitted a photo of her salad into our latest CPY Instagram Challenge. Her take on Kale Salad is a breeze to make and the Tahini dressing is really tasty. Cheryl said the recipe was a spontaneous creation using ingredients that she had on hand – perfect for busy yogis on the go. Try it out for lunch!
Ingredients
For the Salad
2 cups chopped kale
1 cup assorted veggies of choice (shredded carrot, cabbage – go local and seasonal!)
1 serving sunflower seeds, raw almonds or nuts of choice
For the Tahini Dressing
1 tbsp Tahini
Juice of 1 lemon
3 tbsp olive oil
Pinch of salt/pepper to taste
Instructions
Whisk all dressing ingredients together and massage into Kale.
Let sit for 5-10 minutes, and then fold in the remaining veggies.
Top with lemon zest and/or nuts of choice.
Add tofu or chicken breast if you’re craving a heartier salad.
Serve with whole grain bread or crackers for the ultimate power lunch. Enjoy!
