Plant Powered Breakfast Bowl

Sometimes intense recipes are really fun to tackle in the kitchen… but most days, I just want a healthy idea that I can easily whip up and alter if I need to! The idea for this plant powered bowl actually came to me on a rainy day when I didn’t want to go grocery shopping. What can I make with what I already have on hand? Beans, sweet potatoes, kale, eggs… those might seem like boring ingredients, but put them together and you’ve got a super nutritious and delicious breakfast, lunch or even dinner!

Ingredients

  • ½ cup riced sweet potato 

  • 4 big kale leaves, washed and ripped into bite size pieces

  • ½ cup black beans, rinsed

  • 1 egg

  • Pinch of garlic powder

  • 2 tbsp olive oil

  • Salt and pepper

  • Salsa

Instructions

  1. Start with your riced sweet potato! You can actually buy this in the frozen section of most grocery stores now, but if you can’t find it - don’t worry! Spiralize a sweet potato and then use this method to turn it into rice!

  2. Heat 1 tbsp of olive oil over medium heat and add your sweet potato rice. Cook until the sweet potato starts to get tender, and then throw in the kale. As I mentioned, I like to add small pieces of kale to this recipe, so it’s not too overwhelming. Season with salt and pepper. Keep cooking until the kale wilts and the sweet potato is soft and warm. Transfer to a bowl.

  3. Rinse your black beans and add them right to the warm pan that had your sweet potatoes and kale in it with a little olive oil. Season with salt, pepper and garlic powder. Once they start to get warm, I like to smash them with the back of a wooden spoon. Add those to your bowl next to the sweet potato/kale.

  4. Quickly rinse your pan, heat a little bit more olive oil, and then crack an egg in there. I always season my eggs with salt and pepper when they cook, but you can definitely skip that if you want. Cook to your liking.

  5. Spoon a little bit of salsa over the veggies in the bowl and then place your cooked egg on top. Crack the yolk, mix it up and enjoy!
