Pack a Healthy Picnic
There’s nothing better on a warm and sunny afternoon then packing a picnic for the park! It’s a simple way to get out of the house and embrace the fresh air. Keep your meal light, healthy and in-season with these yummy salads.
Heirloom Tomato & Watermelon Salad
Ingredients
2 medium heirloom tomatoes, large diced
½ small watermelon, large diced
6 - 8 torn basil leaves
½ cup cashews, rough chopped
½ cup crumbled feta cheese
1 tbsp extra virgin olive oil
Salt & pepper to taste
Instructions
Combine first five ingredients in a large mixing bowl, drizzle with olive oil and season with salt and pepper. Enjoy!
Cherry & Chicken Salad
Ingredients
1 cup pitted fresh cherries, rough chopped
1 ½ cups shredded chicken breasts or thighs
½ cup olive oil or mayonnaise
1 tbsp Dijon mustard
Salt & pepper to taste
Instructions
Combine all ingredients in a small bowl. Serve with salad greens, crackers or a crisp of your choice. Yum.
Coconut + Sparkling Water
Ingredients
1 can coconut water
1 can sparkling water
Lime garnish
Instructions
Fill a cup with half coconut water, half sparkling water. Garnish with lime and delight in feeling refreshed.
