Macadamia Apple Muesli

You know what makes me feel adult AF? Eating muesli. Don’t get me wrong, I love granola — but something about eating muesli makes me feel like I have my life together. Like when you get a mani pedi. Or wear matching bra + undies. That kinda feeling.

Here's one of my favorite muesli recipes to get you started:

Ingredients

  • 2c rolled oats

  • 1/2c macadamia nuts

  • 1/2c dried apples

  • 1/4c maple syrup

  • 1/4c melted coconut oil

  • Cinnamon to taste

  • Salt to taste

  • Almond milk or yogurt

Directions

  • Mix together 2c rolled oats, 1/2c macadamia nuts, 1/2c dried apples, 1/4c maple syrup, 1/4c melted coconut oil, cinnamon, salt.

  • Bake at 350 for 15 mins until just toasted. (I don’t think most muesli is traditionally toasted but yolo!)

  • Serve with almond milk or over yogurt. 

  • Pro tip: bury your muesli in toppings so you can’t tell which way is up. For example, I used almond butter, raspberries, apples, and shredded coconut on the bowl pictured!
