CorePower Yoga loves introducing you to our studio managers around the country. Meet Rachel Chadima, our Uptown manager in Minneapolis, MN.

What is your role at CorePower Yoga?
Studio Manager at Uptown CPY.

What is the best part of your job?
I feel so fortunate to be doing something that I love. Nothing is better than helping others and I’m so lucky to be a part of something that makes a difference in peoples’ lives. I work amongst the most inspiring, kind and loving people around - students, Uptown teachers, mentors, and the MN management team alike. It doesn’t get much better than that!

How do you spend your time on the weekends?
My family and friends mean the world to me, and I love spending time with them on the weekends. They keep me rooted and have always been my biggest cheerleaders. I also love going out to eat, weekend getaways, choreographing dance routines for a local dance studio, and I’m hoping to get involved with the Make-A-Wish Foundation.

How did you find CorePower Yoga?
As a competitive dancer in college, I was looking for another type of physical activity in the off-season. My mom and I took our first class together and were immediately hooked! Dance has always been my passion, and in performing and movement is where I feel truly alive. In yoga, I find the same!

What does a typical Tuesday look like for you?
I usually take a C2 or CorePower Ryder, meet with my awesome assistant, Molly, spend my time in the lobby with teachers and students, then top it off with date night!

What is your favorite yoga posture, and why?
Half Moon - I feel lifted and strong.

Tell us something surprising about yourself.
During my four years dancing for the University of St. Thomas, I won 3 National Championships.

What is your favorite dessert?
Chocolate, chocolate, chocolate…need I say more?

Preparing for your Super Bowl party while on a cleanse can at first thought seem daunting. Fret not. Clean eating doesn’t have to be bland, and we guarantee you can make a crowd-pleasing dish without even telling your discerning significant other and his friends that he’s eating well. Holidays and parties do not need to derail you from your commitment to clean eating!

Appetizer: Crispy Roasted Chickpeas
Put these in a bowl with mixed nuts for a new taste, texture and healthy nutrition.

Ingredients:

  • Garbanzo Beans (1 15 oz can)
  • Olive oil
  • Salt
  • Spice blend

Drain Garbanzo beans, rinse under water and lay them out to dry, patting off excess water with a paper towel. You can choose to remove any skin or leave it on, your choice. Drizzle with a bit of olive oil and bake them at 400 F for 30 – 40 minutes until golden brown and crunchy. Season with salt and your own favorite blend of spices and serve.
Main Dish: Shaved Butternut Squash & Caramelized Onion Pizza with Goat Cheese
Use a pre-bought gluten free crust, or buy a mix at the store. For those who are dairy free, sprinkle cheese on half and leave the other half alone.

Main Dish: Shaved Butternut Squash & Caramelized Onion Pizza with Goat Cheese

Ingredients:

  • 1/2 tbsp olive oil
  • 1 large yellow onion, thinly sliced
  • 1 lb frozen whole-wheat pizza dough, thawed
  • 4 oz peeled and shaved butternut squash, about 1/4 of an average size squash (TIP: Choose a squash with a long neck to ease peeling)
  • 3 oz goat cheese, crumbled
  • 1/2 oz dry-roasted unsalted pumpkin seeds
  • 2 cups baby arugula
  • 3/4 cup balsamic vinegar

Preheat oven to 450 F. Heat oil in a medium nonstick skillet on medium-low. Add onions and cook, stirring occasionally, until soft and golden, about 25 minutes. If onions begin to stick to skillet, occasionally add a splash of water. Roll dough into a 12- to 13-inch circle and transfer to a pizza pan or baking sheet lined with parchment paper. Scatter onions, squash, goat cheese and pumpkin seeds over top. Bake for 12 to 15 minutes, until crust is lightly browned and squash is wilted. Meanwhile, in a small saucepan, add vinegar and bring to a boil on high heat. Cook until reduced to 1/4 cup, about 5 minutes. Set aside. Remove pizza from oven and immediately scatter with arugula. Drizzle with vinegar reduction and slice into 8 equal pieces.

Dessert: Slow Cooker Brownies
Experiment with dark chocolate for a rich taste and antioxidant boost.

Ingredients:

  • 1 cup whole wheat pastry flour
  • ½ cup cocoa powder, unsweetened
  • 1-1/2 teaspoon baking powder
  • ½ cup apple sauce, unsweetened
  • 2 medium, ripe bananas, mashed
  • 1 cup honey
  • 4 egg whites
  • 6 ounces unsweetened Baker’s Chocolate (6 squares)
  • 1 tablespoon coconut oil
  • ½ cup walnuts (optional)
  • Olive oil in an oil sprayer

Line the bottom of your slow cooker with parchment by placing the slow cooker liner on a piece of parchment, drawing a line around the base and cutting out. After inserting the liner, spray the entire inside with an oil sprayer.

In a large mixing bowl, blend the flour, cocoa powder and baking soda with a whisk. In the microwave (microwave safe bowl), melt the chocolate for 2 minutes, and then in 30 second intervals, stirring between each one until the chocolate is melted. Stir the oil into the chocolate.

In a separate large mixing bowl, blend the apple sauce, mashed bananas, honey, egg whites, and melted chocolate. Combine well with the whisk. Pour into slow cooker liner and cook for 4 hours on low. A knife inserted into the middle should pull out clean. If not, continue to cook without the lid for an additional 1/2 hour. To remove, run a knife around the edge of the liner and flip upside down onto a clean surface. The brownie should slide right out. Allow to cool. Slice and serve.
