Recipe: Breakfast Quinoa

We’ve heard for years that breakfast is the most important meal of the day and that you shouldn’t skip it. But when your only option for a quick breakfast comes down to a bowl of cold cereal, it’s easy to be less than enthusiastic about it. This recipe incorporates protein-rich quinoa, blueberries and cinnamon. For a healthier take on this recipe, substitute the brown sugar with a couple of chopped dates to sweeten. Double the recipe for a quick breakfast later in the week!
Ingredients:
- 2 cups almond milk, plus more for serving
- 1 cup quinoa, rinsed
- 3 tablespoons light-brown sugar, plus more for serving
- 1/8 teaspoon ground cinnamon, plus more for serving
- 1 cup (1/2 pint) fresh blueberries, plus more for serving
Directions:
Bring almond milk to a boil in a small saucepan. Add quinoa, and return to a boil. Reduce heat to low, and simmer, covered, until three-quarters of the almond milk has been absorbed, about 15 minutes. Stir in sugar and cinnamon. Cook, covered, until almost all the milk has been absorbed, about 8 minutes. Stir in blueberries, and cook for 30 seconds. Serve with additional almond milk, sugar, cinnamon, and blueberries.
Yield: 2 cups
